Introduction:

Palak Paneer is a beloved classic in Indian cuisine that perfectly marries the goodness of fresh spinach leaves with the rich creaminess of paneer (Indian cottage cheese). Ingredients:

- 2 cups fresh spinach leaves, washed and chopped

- 200g paneer (Indian cottage cheese), cubed

- 1 large onion, finely chopped

- 2 ripe tomatoes, pureed

- 2-3 green chilies, finely chopped (adjust to taste)

- 1-inch piece of ginger, grated

- 4-5 garlic cloves, minced

- 1/2 teaspoon cumin seeds

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder (adjust to taste)

- 1 teaspoon garam masala

- 1/2 teaspoon cumin powder

- 1/2 teaspoon coriander powder

- 2 tablespoons cooking oil or ghee (clarified butter)

- Salt to taste

- Water, as needed

Method:


1.Blanch the Spinach:

   - Bring a pot of water to boil.

   - Add the washed and chopped spinach leaves.

   - Let them cook for about 2 minutes.

   - Drain the spinach and immediately plunge it into cold water to retain its vibrant green color.

   - Blend the blanched spinach to a smooth puree. Set aside.

2.Prepare the Paneer:

   - In a pan, heat a tablespoon of oil or ghee.

   - Add the paneer cubes and lightly fry them until they turn golden brown. Remove and set aside.


3.Sauté the Aromatics:

   - In the same pan, add the remaining oil or ghee.

   - Add cumin seeds and let them splutter.

   - Add finely chopped onions and sauté until golden brown.


4. Add Spices:

   - Add minced garlic, grated ginger, and green chilies. Sauté for a minute.

   - Add turmeric, red chili powder, cumin powder, coriander powder, and a pinch of salt. Mix well.


5. Tomato Puree:

   - Add tomato puree and cook until the mixture starts leaving the sides of the pan.


6.Add Spinach Puree:

   - Add the spinach puree and mix thoroughly.

   - Let it cook for about 5-7 minutes on medium heat.


7.Creaminess and Paneer:

   - Add garam masala and mix.

   - Gently fold in the fried paneer cubes.


8.Finishing Touch:

   - Adjust the seasoning and consistency with salt and water as needed.

   - Let the dish simmer for another 5 minutes.


9. Serve:

   - Your nutritious Palak Paneer is ready to be served.

   - Garnish with a dollop of fresh cream if desired.
